Black Sesame Cake Recipe
A unique Korean cake featuring the nutty, earthy flavor of black sesame seeds with delicate vanilla cream layers.
Ingredients
For the Black Sesame Sponge:
- 6 large eggs, separated
- 90g (3/4 cup) cake flour
- 30g (1/4 cup) black sesame powder
- 120g (3/5 cup) granulated sugar
- 40ml (3 tbsp) milk
- 40ml (3 tbsp) vegetable oil
- 1 tsp vanilla extract
- 1/4 tsp salt
For the Vanilla Cream:
- 400ml heavy whipping cream
- 60g powdered sugar
- 2 tsp vanilla extract
- 2 tbsp toasted black sesame seeds
For Decoration:
- Extra toasted black sesame seeds
- White chocolate shavings
- Edible gold dust (optional)
Instructions
Make the Black Sesame Sponge:
- Preheat oven to 170°C (340°F). Line two 8-inch round pans with parchment paper.
- Toast black sesame seeds in a dry pan until fragrant, then grind into fine powder.
- Sift together cake flour, black sesame powder, and salt.
- Whisk egg yolks with 1/3 of the sugar until pale and thick.
- Add milk, oil, and vanilla to the yolk mixture.
- Fold the flour mixture into the yolk mixture until just combined.
- Whip egg whites to soft peaks, gradually add remaining sugar to stiff peaks.
- Gently fold meringue into batter in three additions.
- Divide between pans and bake for 25-28 minutes.
- Cool completely on wire racks.
Prepare the Vanilla Cream:
- Whip cream with powdered sugar and vanilla until soft peaks form.
- Fold in toasted sesame seeds.
Assemble the Cake:
- Cut each cake layer in half horizontally.
- Layer cake with vanilla cream between each layer.
- Cover entire cake with remaining cream.
- Garnish with sesame seeds and white chocolate shavings.
- Refrigerate for 2 hours before serving.

Grinding Sesame
Toast sesame seeds until fragrant before grinding. A coffee grinder works best for achieving fine powder.
Flavor Balance
The nutty sesame flavor should be prominent but not overwhelming. Adjust the amount to your taste preference.
