Coffee Roll Cake Recipe

Ingredients

For the Coffee Sponge:

  • 4 large eggs
  • 80g granulated sugar
  • 75g cake flour
  • 2 tbsp instant espresso powder
  • 30ml strong coffee, cooled
  • 20ml vegetable oil
  • 1/4 tsp salt

For the Coffee Buttercream:

  • 100g butter, softened
  • 200g powdered sugar
  • 2 tbsp instant espresso powder
  • 3 tbsp heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

For Assembly:

  • 100ml heavy cream
  • 1 tbsp powdered sugar

For Decoration:

  • Dark chocolate shavings
  • Coffee beans for garnish
  • Cocoa powder for dusting

Instructions

Make the Coffee Sponge:

  1. Preheat oven to 180°C (350°F). Line a 10x15 inch jelly roll pan.
  2. Dissolve espresso powder in cooled coffee.
  3. Beat eggs and sugar until thick and pale, about 5 minutes.
  4. Sift flour and salt, fold into egg mixture in two additions.
  5. Mix coffee mixture and oil, fold into batter until just combined.
  6. Spread evenly in pan and bake for 10-12 minutes.
  7. Turn onto clean towel dusted with cocoa powder.
  8. Roll up with towel and cool completely.

Make Coffee Buttercream:

  1. Dissolve espresso powder in 1 tbsp hot water, cool.
  2. Beat butter until light and fluffy.
  3. Gradually add powdered sugar, beating until smooth.
  4. Add coffee mixture, cream, vanilla, and salt. Beat until fluffy.

Assemble:

  1. Whip cream with powdered sugar to soft peaks.
  2. Unroll cake and spread buttercream evenly.
  3. Top with whipped cream and re-roll tightly.
  4. Wrap in plastic and refrigerate 2 hours.
  5. Garnish with chocolate shavings and coffee beans.
  6. Dust lightly with cocoa powder before serving.
