Korean Bingsu Recipe

Shaved ice dessert with sweet toppings, red beans, and condensed milk - the ultimate Korean summer treat that's refreshing and indulgent.

Ingredients

For the Shaved Ice:

  • 4 cups ice cubes
  • 2 tbsp condensed milk
  • 1 tbsp simple syrup

For the Toppings:

  • 100g sweet red beans (cooked)
  • 6-8 fresh strawberries, sliced
  • 4 pieces Korean rice cake (tteok)
  • 2 tbsp sweetened condensed milk
  • 1 tbsp honey
  • 2 tbsp chopped nuts (almonds or peanuts)
  • Fresh mint leaves

Optional Toppings:

  • Mango chunks
  • Kiwi slices
  • Chocolate syrup
  • Matcha powder
  • Coconut flakes

Instructions

Prepare the Toppings:

  1. If using dried red beans, cook until tender and sweeten with sugar.
  2. Slice strawberries and other fresh fruits.
  3. Cut rice cakes into bite-sized pieces.
  4. Prepare all toppings in separate bowls.

Make the Shaved Ice:

  1. Use a shaved ice machine or blender to create fine ice shavings.
  2. If using blender, pulse ice cubes until you get snow-like texture.
  3. Mix shaved ice with condensed milk and simple syrup.

Assemble the Bingsu:

  1. Mound the shaved ice mixture in a large serving bowl.
  2. Arrange red beans around and on top of the ice.
  3. Add fresh fruit slices decoratively.
  4. Place rice cake pieces throughout.
  5. Drizzle with condensed milk and honey.
  6. Sprinkle with chopped nuts and mint leaves.
  7. Serve immediately with spoons.

Bingsu Perfection

Ice Texture

The key is achieving fine, fluffy ice shavings. If too coarse, the bingsu won't have the right mouthfeel.

Serving Speed

Serve immediately after assembling to prevent melting. Pre-chill the serving bowl for best results.
